Since beginning with Inner Icon, improvements in our health determined in the common measurable ways have been recognized and appreciated, weight loss, drops in pant waist size, picking up the next loop on the belt, etc, etc. However, the most satisfying has been the improvements which are less tangible, primarily performance improvements in the activities we enjoy. I’ve played basketball two mornings a week for years. Over the last couple of years prior to joining Inner Icon I’ve notice my performance, coordination, endurance and abilities diminishing and was beginning to wonder if perhaps my basketball days were behind me. After six months of Crossfit my biggest surprise was not increased endurance or condition, but the return of coordination and abilities on the court. I’m no longer entertaining thoughts of hanging up the game. Improvements in performance and enjoyment are being experienced in skiing, bicycling, hiking and running. To enjoy these activities at the levels we use to proves to us the value of the program. We just feel fitter! The diet info you impart to us has also been transformative, although we revert to previous patterns, we are aware of the importance of our food choices. Slowly we are substituting good for bad and changing diet habits.

Recipes
Cinnamon Muffins
These are a delicious alternative to cinnamon rolls for a quick addition at breakfast or part of brunch!
Ingredients:
Muffin mix-
2 1/2 cups almond flour
1 tablespoon coconut flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup plus 1 tablespoon coconut milk
1/2 cup honey
Glaze-
2 tablespoons honey
1 tablespoon ground cinnamon
1 tablespoon melted butter
Directions:
Preheat oven to 325 degrees F. Mix together all the dry batter ingredients. Add the wet batter ingredients and mix well with a whisk. Pour batter evenly into twelve muffin cups.
Bake for 20-25 minutes or until golden brown.
Mix all the topping ingredients in a separate bowl, and drizzle over the muffins.
