A year ago I was in the worst shape of my life and the heaviest I have ever been. I was pre-diabetic. I had high cholesterol and high sugar levels, knee and foot issues and was just getting so incredibly weak. The past few years I had been telling myself I wanted to be in shape for my 50th birthday. Well here I was at 52 and in worse shape. Finally in August I decided to do something about it. I went to David at Inner Icon, and boy did I find out just how out of shape I was! I am only working out 3x’s a week and yet the results are incredible. In the past I have tried many different workouts. Two years ago I was working out 5x’s a week for 2 hours and still did not have results like this. The change is amazing, CrossFit truly targets the whole body. Though we had knee issues we had to work around I was seeing results immediately. I was losing inches way before I started to lose weight (which shows how high my body fat was).
In January David encouraged his clients to participate in a Paleo Challenge which was to follow the Paleo Diet and improve our workouts for one month. This is exactly what I needed after the holidays to get back on track so I accepted the challenge and I have to say it was such an incredible month. I lost 12 pounds and 6½ inches. This was truly amazing. (side note: Julie won this competition!)
My life has dramatically changed. I am no longer pre diabetic, my levels are all down and I feel amazing. It was wonderful to go to the doctor and have him tell me how fantastic I look and how impressed he was with the progress I have made. So it wasn’t my 50th but on my 53rd birthday I was in better shape than I have been in 20 years. I have to say I can’t wait to see where I’ll be at my 54th. I love this stuff!!!!
David I know you said not to make this about you but if it wasn’t for your encouragement, your enthusiasm, your knowledge and your desire to help give me a better quality of life, I would not be where I am today. Cinnamon Muffins
These are a delicious alternative to cinnamon rolls for a quick addition at breakfast or part of brunch!
Ingredients:
Muffin mix-
2 1/2 cups almond flour
1 tablespoon coconut flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup plus 1 tablespoon coconut milk
1/2 cup honey
Glaze-
2 tablespoons honey
1 tablespoon ground cinnamon
1 tablespoon melted butter
Directions:
Preheat oven to 325 degrees F. Mix together all the dry batter ingredients. Add the wet batter ingredients and mix well with a whisk. Pour batter evenly into twelve muffin cups.
Bake for 20-25 minutes or until golden brown.
Mix all the topping ingredients in a separate bowl, and drizzle over the muffins.
