Inner Icon against Muscular Dystrophy

We'd like to invite you to join Inner Icon (www.innericonfitness.com) and friends in the fight against muscular dystrophy and be part of our team, “Inner Icon Against MD” for the 2009 MDA Tacoma Stride & Ride.

The Tacoma Stride & Ride is an outdoor walk on Saturday, September 12 at the beautiful Point Defiance Park - Owen Beach.  It will be either a 1 or 3 mile walk along the water. The event kicks off at 10 am, with registration at 9 am, so it's neither an incredibly early morning...nor an endurance event. The event is a really fun celebration/party and we call it our "family reunion" for the families and those who support MDA.  It's just a fantastic time to get together with each other and support a cause that truly is deserving of our time and dollars.

As a team member there is no entry fee and no minimum you have to raise, but you are encouraged to raise at least 5 minutes of research for MDA which is $425.  All funds raised will be donated toward research to find a cure for the terrible diseases under the umbrella of muscular dystrophy (there are 43 total, including ALS or Lou Gehrig’s disease, Duchene’s Muscular Dystrophy and Spinal Muscular Atrophy).  Our team goal is $2,125, so we need your help!

We would love for all of you to join our team with this event. We know it's a bit far out, but we wanted to put it out there now as summer gets busy! If you can not or do not choose to be a team member, we encourage you to donate to our team and help the cause!

Recipes

Cinnamon Muffins

These are a delicious alternative to cinnamon rolls for a quick addition at breakfast or part of brunch!

Ingredients:
Muffin mix-
2 1/2 cups almond flour
1 tablespoon coconut flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup plus 1 tablespoon coconut milk
1/2 cup honey

Glaze-
2 tablespoons honey
1 tablespoon ground cinnamon
1 tablespoon melted butter

 

Directions:
Preheat oven to 325 degrees F. Mix together all the dry batter ingredients. Add the wet batter ingredients and mix well with a whisk. Pour batter evenly into twelve muffin cups.

Bake for 20-25 minutes or until golden brown.   
Mix all the topping ingredients in a separate bowl, and drizzle over the muffins.
